4. Are hairnets required for all restaurant employees?

All employees engaged in food preparation and/or utensil washing must wear effective hair restraints at all times. Hairnets, headbands, caps, or other effective means must be worn.

Servers are not required to wear hair restraints.

5. Are gloves required to be worn at all times by restaurant food preparation employees?

Gloves are encouraged in certain settings but are not a substitute for good hand washing. Hand washing is the single most important component in eliminating foodborne illness. In some instance's, gloves may give a false sense of security by not adhering to good hand washing.
